The problem of obesity, especially among children, has risen to near epidemic proportions in recent years. To help address this problem, the University of Illinois is sponsoring a forum on May 25 and 26, 2005, which will examine the role that soy foods can play in managing obesity.
The forum will bring together, food industry representatives, health-care professionals, dietitians, and university scientists to review the latest research on how soy and its components may alleviate the long-term health problems related to obesity..
The event is sponsored by the Illinois Center for Soy Foods, the National Soybean Research Laboratory, and the Department of Food Science and Human Nutrition at the U of I. Financial support is provided by the Illinois Soybean Checkoff Board and the soybean industry.
The sessions will feature leading researchers from major universities and food ingredient and processing companies from both North America and around the world. The topics to be covered include the obesity problem in the U.S., human studies on soy and weight loss, industry perspectives, and the economic, cultural and sociological impacts of obesity.
The standard registration fee is $195. A reduced fee of $75 is available for academic and government representatives. Student registration is also available at a fee of only $25. Participant registration includes some scheduled meals during the roundtable session.
The forum will be held at the Hawthorn Suites, 101 Trade Center Drive, Champaign, Illinois. The registration fee does not cover the cost of travel or accommodations.
